To Me is the fastest way to email yourself a quick note or reminder. Just tap the Icon, Type your note and press send. Note to self allows you to send your note through the iPhone Mail application, or enter your own SMTP server for faster use.

To Me launches with the note view and keyboard ready to enter a note. Just type your note and tap send and you are all done.

All that is required to get up and going is to enter the address you want the notes to go.
With To Me you get to choose the subject, and even send the note you type as the subject.

Set "Send Directly from To Me" on to send with one tap from your own email account, or turn it off for easy setup and use the iPhone's built in Mail application.
